Total time: 50–55 minutes

This legendary Southern dessert features a yellow cake base swirled with a rich cream cheese, coconut, and pecan topping that bakes into gooey, candy-like pockets. Perfect for potlucks and reunions.
Ingredients
For the cake base:
1 box yellow cake mix
Ingredients called for on the box (eggs, oil, water)
For the tornado topping:
1 cup chopped pecans
1 cup sweetened shredded coconut
8 oz cream cheese, softened
½ cup unsalted butter, softened
1 box (16 oz) powdered sugar
1 tsp vanilla extract
Instructions
1. Preheat and prepare
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
2. Make the cake batter
Prepare the yellow cake mix according to package directions. Pour batter into the prepared pan and spread evenly.
3. Make the topping
In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add powdered sugar, beating until combined. Stir in vanilla, chopped pecans, and shredded coconut. (The mixture will be thick.)
4. Create the tornado swirl
Drop spoonfuls of the cream cheese mixture randomly over the cake batter. Gently swirl with a knife to create a marbled effect. Do not overmix – you want distinct swirls, not fully incorporated batter.
5. Bake
Bake for 35–40 minutes, until the cake is golden brown and a toothpick inserted into the cake portion (not the topping) comes out clean. The topping will remain soft.
6. Cool
Let the cake cool completely in the pan on a wire rack. The topping will continue to set as it cools.
7. Serve
Cut into squares. Serve at room temperature or slightly warm.
Pro Tips
Room temperature ingredients – Softened cream cheese and butter ensure a lump-free topping.
Don’t over-swirl – Gentle ribbons of topping give the signature “tornado” look.
Check doneness – Test the cake part with a toothpick; the topping stays soft.
Cool completely – For cleaner slices, let the cake cool fully before cutting.
Toast the pecans – Dry-toast in a skillet for 2–3 minutes for extra nutty flavor.
Variations
Chocolate Tornado – Use a chocolate cake mix.
Nut‑free – Omit pecans; add an extra ½ cup coconut.
Caramel Tornado – Drizzle caramel sauce over the top before serving.
Cherry Tornado – Fold ½ cup chopped maraschino cherries into the topping.
