Slow Cooker Smoked Sausage Noodles
This smoky, hearty slow cooker meal turns just a few ingredients into tender egg noodles coated in a rich, savory sausage gravy. Perfect for busy days and tight budgets.

Instructions
1. Prepare the sausage
Slice the smoked sausage into ½-inch thick rounds. Optional but recommended: For deeper flavor, brown the slices in a skillet over medium heat until lightly colored on both sides.
2. Assemble in the slow cooker
Lightly coat the inside of your slow cooker with oil or nonstick spray for easier cleanup. Add the sliced sausage to the bottom.
3. Make the sauce
In a bowl or large measuring cup, whisk together the beef broth and condensed cream of mushroom soup until mostly smooth (a few small lumps are fine).
4. Combine and cook
Pour the broth-soup mixture over the sausage. Stir gently so the sausage is mostly covered by liquid. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the sausage is very hot and the mixture is bubbling.
5. Add the noodles
About 30–40 minutes before serving, stir in the dry egg noodles, pressing them down so they are mostly submerged in the liquid. Cover and cook on HIGH for 20–30 minutes, stirring once halfway through, until the noodles are tender and the sauce has thickened into a glossy gravy. (Start checking at 15–20 minutes – slow cookers vary.)
6. Finish and serve
Stir everything well from the bottom. Taste and add salt or pepper if desired. Ladle into bowls and serve hot directly from the slow cooker.

Vegetable sides: Canned or frozen green beans, peas, or mixed vegetables
Fresh & crunchy: Simple green salad, or sliced cucumbers with salt and vinegar
Stretch it further: Spoon over buttered toast, thick bread slices, rice, or mashed potatoes
Variations & Tips
Picky eaters – Use a mild smoked sausage and slice it smaller so it blends in.
No mushrooms? – Substitute cream of chicken soup for cream of mushroom.
Add vegetables – Stir in a handful of frozen peas or mixed veggies during the last 10–15 minutes of cooking.
Thicker, casserole-like – Reduce beef broth to 3½ cups, or let noodles sit on “warm” for 5–10 minutes after cooking.
Extra smoky – Use andouille or very smoky kielbasa; add a tiny splash of Worcestershire sauce with the broth and soup.
Stretch the meal – Serve over rice, mashed potatoes, or toast – just like families did to feed a crowd on a tight budget.
