For the Salad
| Ingredient | Quantity |
|---|---|
| Ground beef | 1 lb |
| Taco seasoning | 1 packet (1 oz) |
| Water | ¼ cup |
| Romaine lettuce, chopped | 1 head |
| Cherry tomatoes, halved | 2 cups |
| Shredded cheddar cheese | 1 cup |
| Red onion, diced | ½ cup |
| Black beans, drained and rinsed | 1 can (15 oz) |
| Corn kernels (fresh, canned, or frozen) | 1 cup |
| Crushed Doritos (nacho cheese flavor) | 2 cups |
For the Dressing
| Ingredient | Quantity |
|---|---|
| Catalina dressing (or ranch) | 1 cup |
| Lime juice (optional) | juice of 1 lime |
Instructions
1. Cook the ground beef
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula (about 5–7 minutes). Drain excess fat. Add the taco seasoning and water, stirring until the beef is well coated. Simmer for 2–3 minutes, then remove from heat and let cool slightly.
2. Prepare the salad base
In a large salad bowl, combine the chopped romaine, halved cherry tomatoes, shredded cheddar, diced red onion, black beans, and corn. Toss to mix evenly.
3. Add beef and Doritos
Add the seasoned ground beef to the salad and toss gently. Just before serving, add the crushed Doritos – this keeps them crunchy.
4. Dress the salad
Pour the Catalina dressing over the salad and toss until everything is well coated. For extra tang, squeeze in the juice of 1 lime.
5. Serve immediately
Serve right away while the Doritos are still crisp. Enjoy!
Tips & Variations
Make it lighter – Use ground turkey or plant-based crumbles instead of beef, and opt for light dressing.
Spice it up – Add sliced jalapeños, a dash of hot sauce, or use spicy Doritos.
Extra toppings – Sliced olives, diced avocado, sour cream, or fresh cilantro work beautifully.
Dressing swap – Ranch dressing is a popular alternative to Catalina; try a mix of both for a creamy-tangy flavor.
Meal prep – Keep all components (beef, veggies, dressing, Doritos) separate and assemble just before eating to avoid sogginess.
