Garlic Butter Baked Scallops

Prep time: 10 minutes
Cook time: 12–15 minutes
Servings: 3–4 as an appetizer, 2 as a main course

Ingredients

  • 1 lb large scallops, patted dry

  • 4 tbsp butter, melted

  • 3 cloves garlic, minced

  • ¼ cup breadcrumbs (plain or panko)

  • ¼ cup Parmesan cheese, grated

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a small baking dish or arrange scallops in a single layer on a lined baking sheet.

  2. Prepare the garlic butter mixture – In a small bowl, combine melted butter, minced garlic, and lemon juice.

  3. Season the scallops – Pat scallops dry once more if needed. Arrange them in the baking dish. Brush or drizzle the garlic butter mixture over each scallop. Season lightly with salt and pepper.

  4. Make the topping – In another bowl, mix breadcrumbs, grated Parmesan, and chopped parsley.

  5. Top the scallops – Sprinkle the breadcrumb mixture evenly over the scallops, pressing down gently to help it stick.

  6. Bake – Bake for 12–15 minutes, until the scallops are opaque and firm to the touch, and the topping is golden brown. (Do not overbake, or scallops will become rubbery.)

  7. Serve – Drizzle any remaining pan juices over the scallops. Garnish with fresh parsley and serve immediately with lemon wedges on the side.

Tips for success

  • Dry scallops well – Moisture prevents browning. Use paper towels to thoroughly pat dry before baking.

  • Don’t overcrowd – Leave a little space between scallops so they roast, not steam.

  • For extra crunch – Broil for the last 1–2 minutes, watching closely to avoid burning.

  • Make it a meal – Serve over pasta, rice, or with crusty bread to soak up the garlic butter sauce.
