Ingredients
  • 1 pound ground beef

  • 1 packet taco seasoning

  • 1 can (10 oz) Ro*Tel diced tomatoes with chiles, drained

  • 1 can nacho cheese soup

  • 1/2 cup sour cream

  • 1 cup grated cheddar cheese

  • 12 soft tortillas (8-inch)

  • Guacamole, for garnish

  • Fresh cilantro, chopped, for garnish

  • Sour cream, for garnish (optional)

Instructions
  1. Preheat the oven to 350°F (175°C).

  2. Prepare the baking dish by spraying a 9×9-inch baking dish with non-stick cooking spray.

  3. Cook the beef: Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease.

  4. Season the beef: Return the drained beef to the skillet. Stir in the taco seasoning and water. Cook for 2 more minutes.

  5. Make the filling: In a bowl, combine the drained Ro*Tel tomatoes, nacho cheese soup, and sour cream. Stir in the seasoned beef until evenly combined.

  6. Layer the casserole: Place 3 tortillas in the bottom of the prepared baking dish. Spread 1/3 of the beef mixture evenly over the tortillas. Repeat the layers twice more, ending with a layer of tortillas on top.

  7. Add the cheese: Sprinkle the grated cheddar cheese evenly over the top layer of tortillas.

  8. Bake: Place in the preheated oven and bake for 20 minutes, or until the cheese is melted, bubbly, and slightly browned at the edges.

Ingredients

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 packet (1 oz) taco seasoning (or 2–3 tablespoons homemade)

  • 1 can (15 oz) diced tomatoes with green chilies (like Rotel)

  • 1 can (15 oz) corn, drained

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) pinto beans, drained and rinsed (optional)

  • 4 cups chicken or beef broth

  • 8 oz cream cheese, softened and cut into cubes

  • ½ cup heavy cream or sour cream (optional for extra richness)

  • Salt and pepper to taste

Optional toppings: shredded cheddar cheese, crushed tortilla chips, sliced avocado, fresh cilantro, sour cream, pickled jalape帽os, lime wedges.

Instructions

  1. Brown the meat – In a large pot or Dutch oven over medium‑high heat, cook the ground beef until no longer pink, breaking it up with a spoon, about 5–7 minutes. Drain excess fat if needed.

  2. Saut茅 aromatics – Add the diced onion and cook for 2–3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add seasonings and canned goods – Stir in the taco seasoning and cook for 30 seconds. Then add the diced tomatoes (with juices), corn, black beans, pinto beans (if using), and chicken broth. Stir to combine.

  4. Simmer – Bring the soup to a boil, then reduce heat to low. Cover and simmer for 10 minutes to allow the flavors to meld.
