Ingredients
For the Sweet Potato Filling
4 lbs sweet potatoes (about 6 cups mashed)
3 large eggs
½ cup granulated sugar
6 Tbsp unsalted butter, melted and slightly cooled
½ Tbsp vanilla extract
⅛ tsp fine sea salt (or a pinch of salt)
1 cup dried cranberries (optional)
For the Pecan Crumble Topping
⅔ cup brown sugar, packed
⅓ cup all-purpose flour (or gluten-free flour substitute)
3 Tbsp unsalted butter, cold, diced
1 cup pecans, coarsely chopped (optional)
Instructions
1. Cook the Sweet Potatoes
Peel and chop the sweet potatoes into 1" chunks. Add them to a large pot with enough water to cover the surface of the potatoes and bring to a boil. Cook uncovered at a medium/low boil until easily pierced with a fork, about 10–15 minutes. Drain and mash. For even creamier results, mash with an electric mixer.
2. Make the Sweet Potato Filling
Preheat the oven to 350°F. In a large bowl, whisk together the eggs, granulated sugar, melted butter, vanilla, and a pinch of salt. Stir this mixture into the cooked sweet potatoes, then stir in the dried cranberries. Spread the sweet potato mixture evenly into a 9×13 casserole dish.
3. Make the Pecan Crumble Topping
In a small bowl, combine the brown sugar and flour. Add the cold diced butter and use your hands to rub the mixture together until pea-sized crumbs form. Stir in the chopped pecans.
4. Assemble and Bake
Sprinkle the crumble topping evenly over the sweet potatoes. Bake uncovered at 350°F for 35–40 minutes, or until hot and the sweet potatoes start to puff at the edges.
