Crispy Buffalo Wings
Crispy Buffalo Chicken Wings are irresistible when coated in a homemade 3-ingredient buffalo sauce. This easy, restaurant-quality appetizer is perfect for game day, parties, or any time you're craving bold, spicy flavor.
Ingredients
Servings: 8 (as an appetizer)
For the Chicken Wings
3 lb chicken wings, wings and drummettes split, wingtips removed
1 Tbsp baking powder (use aluminum-free)
1 tsp fine sea salt
2 tsp garlic powder
For the Buffalo Sauce
¼ cup unsalted butter, melted
¼ cup Frank's Original Red Hot Sauce
1 Tbsp granulated sugar, or brown sugar
Instructions
1. Prep the Chicken
Thoroughly pat the chicken dry with a paper towel. Preheat the oven to 450°F. Line a rimmed baking sheet with foil and place a wire rack over the pan.
2. Season the Chicken
Combine the baking powder, salt, and garlic powder in a bowl. Sprinkle the mixture over the chicken and toss to combine. Pat the chicken wings dry once more with paper towels, then arrange them on the prepared wire rack.
3. Bake the Chicken
Bake at 450°F for 50 minutes, flipping halfway through, or until the skin is crisp and the center of the wings reaches at least 165°F on an instant-read thermometer (they're even more tender at 175–180°F).
4. Coat and Serve
In a medium-sized bowl, combine the sauce ingredients. Remove the chicken from the baking sheet and transfer to a bowl. Drizzle the sauce over the chicken and toss to coat evenly. Serve with your favorite dipping sauce.
Notes
Baking powder matters: Use aluminum-free baking powder, not baking soda, for the best flavor and crispy skin.
For crispiest results: Pat the wings thoroughly dry before seasoning, and toss with Buffalo sauce just before serving.
Temperature tip: While 165°F is the safe minimum, wings are even more tender when cooked to 175–180°F.
