Ingredients
3–4 lb pork shoulder or pork butt
2 lb sauerkraut, with juices
1 cup apple juice or apple cider
Salt and black pepper, to taste
Instructions
Lightly grease the slow cooker to make cleanup easier.
Spread the sauerkraut and its juices evenly across the bottom of the slow cooker.
Pour the apple juice over the sauerkraut.
Pat the pork dry, season it with salt and pepper, and place it on top of the sauerkraut.
Cover and cook on LOW for 8–10 hours, until the pork is tender and shreds easily.
Remove the pork and shred it with two forks. Discard any excess fat, then return the shredded pork to the slow cooker.
Stir the pork and sauerkraut together and let it sit on WARM for 10–15 minutes before serving.
Notes
Serve over mashed potatoes, egg noodles, or rice to soak up the flavorful juices.
For a slightly sweeter flavor, add sliced apples before cooking.
