Scored Potatoes

Crispy edges, fluffy centers – a step up from plain baked potatoes

Ingredients

  • 4 large baking potatoes (Russets work best)

  • 2 tablespoons butter, melted (divided)

  • Paprika, for sprinkling

  • 1 tablespoon fresh parsley, chopped

  • Salt and black pepper, to taste

Instructions

1. Preheat the oven
Set your oven to 350°F (175°C).

2. Prep the potatoes
Cut each potato in half lengthwise. You’ll have 8 long halves that look like little boats.

3. Score the potatoes
Using a sharp knife, make about 6 shallow cuts across the rounded top of each half, slicing widthwise. Do not cut all the way through – leave the bottom intact so the slices stay connected. You should be able to gently fan them out like small accordions.

4. Arrange in a dish
Place the potato halves cut-side-up in a shallow baking dish, leaving a little space between each one.

5. Season
Brush the tops with half of the melted butter (about 1 tablespoon). Sprinkle with paprika, chopped parsley, salt, and pepper.

6. Bake
Bake uncovered for about 50 minutes, until the potatoes are tender, the tops are lightly golden, and the ridges begin to brown.

7. Finish
Remove from the oven. Drizzle the remaining melted butter over the potatoes – it will seep into the scored cuts for extra flavor.

8. Serve
Let cool slightly, then enjoy as is or with toppings like cheese, sour cream, or chili.
