    Ingredients

    For the Pretzel Crust:

    • 2 cups crushed pretzels (about 4 cups whole mini pretzels before crushing)

    • ¾ cup unsalted butter, melted

    • ¼ cup granulated sugar

    • ¼ tsp salt

    For the Caramel Layer:

    • 1 cup unsalted butter

    • 1 cup packed brown sugar

    • ¼ cup heavy cream

    • 1 tsp vanilla extract

    • ½ tsp salt

    For the Chocolate Topping:

    • 2 cups semi-sweet or dark chocolate chips

    • 1 Tbsp coconut oil or unsalted butter

    • Flaky sea salt, for sprinkling (optional)

    • Extra crushed pretzels, for garnish (optional)

    Instructions

    1. Prepare the Pan

Line a 9x13" baking dish with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment paper.

    2. Make the Pretzel Crust

In a medium bowl, combine the crushed pretzels, melted butter, granulated sugar, and salt. Stir until the pretzels are evenly coated.

Press the mixture firmly and evenly into the bottom of the prepared baking dish. Use the bottom of a measuring cup or glass to press it down tightly. Place the pan in the refrigerator while you make the caramel.

    3. Make the Caramel Layer

In a medium saucepan over medium heat, combine the butter, brown sugar, heavy cream, and salt. Stir constantly until the butter is melted and the mixture is smooth.

Bring the mixture to a gentle boil, then continue cooking for 3–4 minutes, stirring constantly, until the caramel thickens slightly and turns a deeper amber color.

Remove from heat and stir in the vanilla extract.

    4. Assemble the Caramel Layer

Pour the hot caramel evenly over the chilled pretzel crust. Spread it gently with a spatula to cover the entire surface.

Return the pan to the refrigerator and chill for at least 30 minutes, or until the caramel is firm to the touch.

    5. Add the Chocolate Topping

In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil (or butter) together until smooth, stirring occasionally.

Pour the melted chocolate over the chilled caramel layer and spread it evenly with an offset spatula.

If desired, sprinkle the top with flaky sea salt and extra crushed pretzels.

    6. Chill and Set

Return the pan to the refrigerator and chill for at least 2 hours, or until the chocolate is completely set and firm.

    7. Slice and Serve

Once fully set, lift the bars out of the pan using the parchment paper overhang. Place on a cutting board and cut into squares or rectangles with a sharp knife.

For cleaner cuts, wipe the knife with a warm, damp cloth between slices.

    Notes

    • Pretzel Crushing: Pulse whole pretzels in a food processor, or place them in a zip-top bag and crush with a rolling pin. You want a mix of fine crumbs and small pieces for texture.

    • Caramel Doneness: Be careful not to overcook the caramel, or it will become hard and brittle instead of gooey. It should thicken slightly but remain soft.

    • Chocolate Options: Semi-sweet, dark, or milk chocolate all work well. Use high-quality chocolate for the best flavor.

    • Storage: Store bars in an airtight container in the refrigerator for up to 1 week. Let them sit at room temperature for a few minutes before serving for the best texture.

    • Freezing: These bars freeze well. Wrap individual bars or the whole slab tightly in plastic wrap and foil, then freeze for up to 3 months. Thaw in the refrigerator before slicing and serving.

    • Variations:

      • Peanut Butter Caramel Pretzel Bars – Add ½ cup creamy peanut butter to the caramel layer.

      • Salted Caramel Pretzel Bars – Increase the flaky sea salt on top for extra salty-sweet flavor.

      • Dark Chocolate Pretzel Bars – Use dark chocolate chips for a richer, less sweet topping.

      • Nutty Pretzel Bars – Sprinkle chopped pecans or peanuts over the chocolate before it sets.
