4-Ingredient Slow Cooker Casserole

This 4-Ingredient Slow Cooker Casserole combines tender shredded beef, creamy mushroom-onion gravy, and melted cheese for an easy, hearty dinner. Serve it over mashed potatoes or egg noodles for a comforting meal that practically cooks itself.

Ingredients

  • 2½ to 3 lbs boneless beef chuck roast, trimmed and cut into large chunks

  • 2 (10.5-oz) cans condensed cream of mushroom soup (use straight from the can; do not add water)

  • 1 (1-oz) packet dry onion soup mix

  • 2 cups shredded Colby-Jack or cheddar cheese, lightly packed

Instructions

  1. Prepare the slow cooker. Lightly grease the inside of a 5- to 6-quart slow cooker with oil or cooking spray.

  2. Add the beef. Arrange the fresh or properly thawed chunks of chuck roast in an even layer across the bottom of the slow cooker.

  3. Mix the sauce. Stir the condensed cream of mushroom soup and dry onion soup mix together in a medium bowl until combined. Do not add water, milk, broth, or anything else.

  4. Pour over the beef. Spread the soup mixture evenly over the beef, using a spatula to cover most of the meat.

  5. Cook until tender. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours, until the beef is very tender.

  6. Shred the beef. Once the beef pulls apart easily, use two forks in the slow cooker to shred it into loose pieces and stir it through the thick sauce.

  7. Add the cheese. Smooth the shredded beef mixture into an even layer, then sprinkle the shredded Colby-Jack or cheddar evenly over the top.

  8. Melt the cheese. Cover again and cook on HIGH for 15 to 20 minutes, just until the cheese is fully melted, glossy, and beginning to bubble around the edges.

  9. Rest and serve. Turn the slow cooker to WARM and let the casserole rest for about 10 minutes before serving over egg noodles, mashed potatoes, or baked potatoes.

Notes

  • Refrigerate leftovers within two hours in shallow containers and store for 3 to 4 days.

  • Reheat portions in the microwave until piping hot, or warm them in a covered skillet over low heat with a tiny splash of water if needed.

  • Try not to reheat the same leftovers more than once.
