Ingredients
Potatoes – as many as you need (Russet or Idaho work great)
Olive oil – for coating
Salt – to taste (kosher or sea salt preferred)
Aluminum foil – heavy-duty works best
A fork – for piercing the potatoes
Instructions
Prep the potatoes
Scrub the potatoes thoroughly under cold running water to remove any dirt. Pat them completely dry with a clean kitchen towel. Trim away any blemishes or eyes with a small knife.Poke steam vents
Using a fork, pierce each potato several times all around. This allows steam to escape and prevents them from bursting during cooking.Season
Drizzle each potato with olive oil and rub it all over the skin until evenly coated. Sprinkle generously with salt, turning to cover all sides.Wrap in foil
Place each seasoned potato in the center of a square of aluminum foil. Fold the foil up and over the potato, crimping the edges to seal tightly. Make sure there are no gaps or exposed skin.Cook low and slow
Arrange the foil-wrapped potatoes in the slow cooker in a single layer if possible (stacking is okay if needed).Cook on LOW for 7–8 hours, or on HIGH for 4–5 hours.
Potatoes are done when they are easily pierced with a fork and feel soft when gently squeezed.
Serve
Carefully remove the potatoes from the slow cooker (they'll be hot!) and unwrap. Fluff the insides with a fork and serve warm with your favorite toppings—sour cream, butter, cheese, chives, or crispy bacon bits.Recipe Notes
Flavor variations: Before wrapping, sprinkle on garlic powder, smoked paprika, rosemary, or black pepper for an extra flavor boost.
Sweet potatoes: This method works just as well for sweet potatoes—adjust cooking time as needed based on size.
Make ahead: Keep wrapped potatoes warm in the slow cooker on the "Warm" setting for up to 2 hours after cooking.
