Think Philly cheesesteak meets Mexican street food—and it works beautifully. Tender, seasoned beef, sautéed peppers and onions, and a double dose of melted cheese (Provolone plus a Mexican blend) are folded into warm tortillas and pan-fried until golden and crunchy.

Instructions

  1. Cook the beef
    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced beef, season with salt and pepper, and cook until browned and any released liquid has evaporated. Transfer the beef to a plate and set aside.

  2. Sauté the vegetables
    In the same skillet, add the remaining 1 tablespoon of oil. Toss in the onion, bell peppers, mushrooms, and garlic. Cook until the veggies are tender and lightly caramelized—about 5–6 minutes. Return the beef to the pan, stir everything together, and taste for seasoning.

  3. Assemble the quesadillas
    If using mayo, spread a thin layer over one side of each tortilla (this adds flavor and helps with browning). Divide the beef-and-veg mixture evenly among the tortillas, placing it on one half. Top with Provolone slices and a sprinkle of the Mexican cheese blend. Fold the tortillas in half to enclose the filling.

  4. Crisp to perfection
    Wipe the skillet clean, then heat a light drizzle of oil over low heat. Cook each quesadilla for 2–3 minutes per side, pressing gently with a spatula, until the exterior is deep golden and the cheese is fully melted. Work in batches if needed.

  5. Slice and serve
    Transfer to a cutting board, let rest for a minute, then cut each quesadilla into wedges. Serve warm with your favorite dipping sauce—salsa, sour cream, or extra sriracha mayo.
