Crispy 4-Ingredient Roasted Cabbage Steaks
Living out in the countryside, we've always been good at stretching simple ingredients—especially cabbage—but I never imagined it could become the star of the table. These roasted cabbage steaks first came about when I wanted to prepare a low-carb side dish for a friend watching her sugar intake. After tasting them, she pushed her fries aside and said, "Georgia, these are even better than fries."
The outer edges roast until beautifully golden and crisp, while the inside stays soft and tender. As the cabbage cooks with bacon and black pepper, the kitchen fills with that warm, comforting aroma that feels like a traditional Sunday supper. With only a handful of ingredients and a hot oven, humble cabbage transforms into a rich, flavorful side dish that feels both rustic and fresh.
Serve them straight from the pan while they're still sizzling, topped with crunchy bacon pieces. They pair wonderfully with grilled chicken, pork chops, or baked fish. During the summer, enjoy them alongside juicy tomatoes or a light salad; in colder months, they're perfect with green beans or mashed cauliflower. And for those not avoiding carbs, they're a delicious alternative to fries or roasted potatoes beside meatloaf or roast beef.

Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Green cabbage | 1 medium (2–2½ lbs) | Trimmed and sliced into steaks |
| Olive oil | 4 tablespoons | Plus extra for greasing the foil |
| Thick-cut bacon | 4 slices | Cooked until crisp for topping |
| Black pepper | 1 teaspoon | Freshly ground for best flavor |
That's it. Just four ingredients.
Instructions
1. Preheat and prepare the pan
Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with aluminum foil and lightly coat it with olive oil to prevent sticking.
2. Cook the bacon
Lay the bacon slices on the prepared baking sheet in a single layer. Bake for 10 to 12 minutes, until crisp and golden. Remove the bacon and transfer it to paper towels to drain, but leave the rendered bacon drippings on the pan—they're pure flavor.
3. Prep the cabbage
Peel away any tough or wilted outer leaves from the cabbage. Trim the base slightly so the cabbage sits flat on your cutting board. Using a sharp knife, cut the cabbage into ¾- to 1-inch thick slices (steaks), keeping the core intact so the slices hold together.
4. Arrange and season
Place the cabbage steaks in a single layer on the baking sheet, right over the bacon drippings. Drizzle evenly with the olive oil and season generously with freshly ground black pepper. If the steaks are crowded, use a second baking sheet—they need room to crisp properly.
5. Roast (first side)
Roast the cabbage for 20 minutes, until the bottoms are beginning to brown and the edges look slightly crispy.
6. Flip and finish roasting
Carefully flip each cabbage steak with a spatula, scraping any browned bits back on top. Return the pan to the oven and continue roasting for another 15 to 20 minutes, until the edges are richly browned and the centers are fork-tender.
7. Add the bacon
Crumble the cooled bacon into small pieces and sprinkle it generously over the hot cabbage steaks.
8. Serve
Transfer the steaks to a serving platter or serve directly from the pan. Spoon any savory drippings and bacon bits over the top. Serve immediately while hot and crisp.
Variations & Tips
Make it vegetarian: Simply omit the bacon and roast the cabbage in olive oil with a sprinkle of smoked paprika for a similar depth of flavor.
Add extra seasoning: Garlic powder, onion powder, or a pinch of red pepper flakes are all welcome additions.
Cheese it up: Sprinkle grated Parmesan or crumbled feta over the steaks during the last 5 minutes of roasting.
Serving suggestion: These steaks are wonderful alongside grilled chicken, pork chops, baked fish, or even a Sunday roast.
Seasonal pairings: In summer, serve with fresh tomatoes or a light salad. In cooler months, pair with green beans or mashed cauliflower.
Storage & Reheating
Refrigerator: Store leftovers in an airtight container for up to 3 days.
Reheating: Reheat in a 375°F oven for 5–7 minutes to restore crispiness. Avoid microwaving, as it can make the cabbage soggy.
Make ahead: The bacon can be cooked and crumbled up to 2 days in advance. Store it in the refrigerator and sprinkle over the cabbage just before serving.
Enjoy these crispy, savory cabbage steaks—proof that humble ingredients, when treated with a little love, can become unforgettable.
