Prep Time: 10 minutes
Cook Time: 6–7 hours (LOW) or 3–4 hours (HIGH)
Total Time: 6–7 hours
Servings: 4
Difficulty: Beginner
Ingredients
For the Chicken
4 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
For the Creamy Sauce
1 can (10.5 oz / 300 g) cream of chicken soup
1 cup chicken broth
4 oz (115 g) cream cheese, softened
1 tablespoon Dijon mustard (optional, for tang)
1 teaspoon dried thyme
1 teaspoon dried parsley
3 cloves garlic, minced
1 tablespoon butter
½ teaspoon Italian seasoning
Optional Garnishes
Fresh parsley, chopped
Grated Parmesan cheese
Cracked black pepper
Instructions
1. Season the chicken
Pat the chicken breasts dry with paper towels. Season both sides evenly with salt, pepper, garlic powder, onion powder, and paprika.
2. Make the sauce
In a medium bowl, whisk together the cream of chicken soup, chicken broth, cream cheese, Dijon mustard (if using), garlic, thyme, parsley, butter, and Italian seasoning until smooth and well combined.
3. Assemble in the slow cooker
Place the seasoned chicken breasts in the bottom of the slow cooker in a single layer. Pour the creamy sauce mixture evenly over the chicken, making sure each piece is well coated.
4. Slow cook
Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours. The chicken is ready when it's tender and reaches an internal temperature of 165°F (74°C).
5. Finish the sauce
Carefully remove the chicken from the slow cooker and set it aside on a plate. Stir the sauce vigorously until it's smooth and creamy. Return the chicken to the slow cooker and spoon some of the sauce over the top to coat.
6. Serve
Garnish with fresh parsley, grated Parmesan cheese, and cracked black pepper if desired. Serve hot over mashed potatoes, rice, egg noodles, or alongside roasted vegetables.
Alternative Cooking Methods
Oven Method: Place the seasoned chicken in a baking dish, pour the sauce over it, cover with foil, and bake at 350°F (175°C) for 35 to 45 minutes, or until the chicken reaches 165°F.
Stovetop Method: Simmer the chicken in the sauce over low heat for 25 to 30 minutes, covered, until fully cooked and tender.
Variations & Tips
Add vegetables: Toss in sliced mushrooms, chopped onions, or baby carrots during the last 2 hours of cooking for a complete one-pot meal.
Make it lighter: Use low-fat cream cheese and reduced-sodium cream of chicken soup.
Extra herby: Fresh herbs can be substituted for dried—use about three times the amount of fresh herbs as dried.
Cheesy twist: Stir in ½ cup of shredded Parmesan or cheddar cheese during the last 30 minutes of cooking for an extra-cheesy sauce.
Thicker sauce: If you prefer a thicker gravy, remove the chicken and whisk in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water. Cook on HIGH for 10–15 minutes until thickened.
Storage & Reheating
Refrigerator: Store leftovers in an airtight container for up to 4 days.
Freezer: Freeze cooled chicken and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating: Reheat gently on the stovetop over low heat or in the microwave until warmed through. Add a splash of broth if the sauce has thickened too much.
