Chill time (optional): 30 minutes
Ingredients
⅓ head of green cabbage, finely shredded
1 large carrot, grated or julienned
1 fresh cucumber, thinly sliced or julienned

50 ml (approx. 3½ tbsp) extra virgin olive oil
Salt and black pepper to taste (optional)
Instructions
Shred the cabbage – Place the finely shredded cabbage in a large mixing bowl.
Add carrot and cucumber – Grate the carrot and slice the cucumber thinly; add to the bowl.

Dress the salad – Squeeze fresh lemon juice over the mixture, then drizzle with olive oil. Add salt and pepper if desired.
Toss well – Mix everything until evenly coated.
Chill (optional) – For best flavor, refrigerate for 30 minutes to let the ingredients meld.
Serve cold – Enjoy as a side dish or add a lean protein (grilled chicken, chickpeas, or tofu) for a complete meal.
Why This Salad Supports Healthy Weight Loss
Cabbage & carrots – High in fiber and water, helping you feel full.
Apple – Adds natural sweetness and pectin (a type of soluble fiber).
Olive oil & lemon – Healthy fats and vitamin C; lemon adds brightness without extra calories.
No added sugar or heavy dressings – Keeps the calorie count low.
⚠️ A note on rapid weight loss: Losing 25 kg (55 lbs) in one month is unsafe and unrealistic. Healthy, sustainable weight loss is about 0.5–1 kg (1–2 lbs) per week. Use this salad as part of a balanced diet – not a “miracle” solution.
Enjoy this fresh, crunchy salad as a delicious step toward your health goals!
