Ingredients
For the Chocolate Cake
2 cups all-purpose flour
2 cups granulated sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
1 cup warm milk
½ cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup warm water (or warm coffee for a stronger chocolate flavor)
For the Coconut Pecan Filling
1 cup evaporated milk
1 cup granulated sugar
3 large egg yolks
½ cup butter (1 stick)
1 teaspoon vanilla extract
1⅓ cups shredded sweetened coconut
1 cup chopped pecans
For the Chocolate Frosting
1 cup butter (2 sticks), softened
3½ cups powdered sugar
¾ cup unsweetened cocoa powder
⅓ cup milk
1 teaspoon vanilla extract
Step-by-Step Method
Part 1: Make the Coconut Pecan Filling (Do this first – it needs time to cool)
Combine ingredients in a saucepan – In a medium saucepan, whisk together the evaporated milk, granulated sugar, egg yolks, ½ cup butter, and 1 teaspoon vanilla extract.
Cook over medium heat – Stir constantly with a whisk or wooden spoon until the mixture thickens, about 5–8 minutes. It should coat the back of a spoon.
Add coconut and pecans – Remove from heat. Stir in the shredded coconut and chopped pecans.
Cool completely – Transfer the filling to a bowl. Cover with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Let it cool to room temperature. You can refrigerate it to speed up the process.
Part 2: Make the Chocolate Cake Layers
Preheat oven to 350°F (175°C). Grease and flour three 8-inch or 9-inch round cake pans. For best results, line the bottoms with parchment paper.
Mix dry ingredients – In a large bowl, sift or whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
Add wet ingredients – Add the warm milk, vegetable oil, eggs, and 2 teaspoons vanilla extract. Beat on medium speed for about 2 minutes until smooth.
Add warm liquid – Stir in the warm water (or coffee). The batter will be thin – that’s correct.
Divide and bake – Pour the batter evenly into the three prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool – Let the cakes rest in the pans for 10 minutes. Then turn them out onto wire racks to cool completely.
Part 3: Make the Chocolate Frosting
Beat the butter – In a large bowl, beat the softened 1 cup butter until creamy and smooth.
Sift dry ingredients – In a separate bowl, sift together the powdered sugar and cocoa powder.
Combine alternately – Gradually add the sifted dry mixture to the butter, alternating with the ⅓ cup milk. Begin and end with the dry mixture. Beat well after each addition.
Add vanilla – Mix in the 1 teaspoon vanilla extract. Beat until light and fluffy. If the frosting is too thick, add more milk (1 teaspoon at a time). If too thin, add more powdered sugar.
Part 4: Assemble the Cake
Level the layers – If your cake layers have domed tops, use a serrated knife to slice them flat.
First layer – Place one cake layer on a serving plate or cake stand. Spread about one-third of the coconut pecan filling evenly over the top.
Second layer – Add the second cake layer. Spread another third of the filling on top.
Third layer – Add the final cake layer. Spread the remaining filling on top.
Note: Traditionally, German chocolate cake has the coconut-pecan filling only between the layers and on top – not on the sides. The sides are left bare or lightly frosted with chocolate frosting.
Apply chocolate frosting to the sides – Using an offset spatula, spread the chocolate frosting around the sides of the cake. You can also pipe a decorative border around the top edge.
Optional garnish – Sprinkle extra chopped pecans or toasted coconut on top for decoration.
Part 5: Serve & Store
Serve – Slice and enjoy at room temperature. This cake is very rich, so smaller slices are perfect.
Store – Keep in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving for the best flavor and texture.
Pro Tips for Success
Tip Why It Matters
Cool the filling completely Warm filling will melt the cake layers and make them slide apart.
Use room temperature eggs and milk They blend more evenly into the batter.
Don’t overmix the cake batter Overmixing can make the cake tough.
Coffee enhances chocolate flavor It won’t taste like coffee – it just deepens the chocolate.
Chill the assembled cake briefly If the filling feels soft, 20 minutes in the fridge helps set everything before slicing.
Enjoy your homemade German Chocolate Layer Cake – a true classic that tastes like love and celebration in every bite!
